Abstract :
[en] This study aims at analyzing the development processes of rice vermicelli in Dinh Ke and Thu Duong villages of Bac Giang province. The authors conducted a survey with 66 households involving rice vermicelli production and 51 households who did not involve. In combination with in-depth interviews with representative leaders of "Cooperative of production and trading of rice vermicelli in Dinh Ke" and "Association of production and consumption of Chu vermicelli in Luc Ngan district", the data indicated that not only did the development of traditional craft villages bring high income for farm households but they also helped to conserve Vietnam cuisine culture. In order to develop traditional craft villages, it is necessary to re-establish linkages from a production stage to marketing of products, to ensure adequate facilities for drying products, and to impose strong sanction to deal with illegal trading.
