[en] The characterization of the gastric aspartic proteases and the understanding of their mechanisms of activation led to several applications in many domains as the use of chymosin in cheese industries and the diagnostic of gastric diseases in humans and animals. Particularly, in cattle, the indirect measurement of pepsinogen activity is largely used for the diagnosis of ostertagiosis. Today, the gastric strongyloses are responsible for serious problems of management or the emergence of parasites resistence towards antihelminthics, and no immediate solution is available. Nevertheless, several tracks are proposed such as a more rational use of antihelminthics by the study of blood pepsinogen. This approach held our attention. The present review describes bovine pepsinogen and prochymosin, with an accent on the zymogen structure, their mechanisms of activation and the methods of blood levels measurement. The manuscript will end on the importance of the problems raised by gastric worms, and on the interest of the measurement of blood pepsinogen in the management of these diseases in cattle. [fr] La caractérisation des protéases aspartiques gastriques et surtout la compréhension de leurs mécanismes d’activation permet de nombreuses applications dans des domaines variés comme l’utilisation de la chymosine pour ses capacités coagulantes dans l’industrie fromagère ou le diagnostic des pathologies digestives en médecine humaine et vétérinaire. Ainsi, chez les bovins, le dosage indirect de l’activité enzymatique liée au pepsinogène est utilisé largement pour le diagnostic des parasitoses à Ostertagia sp. Aujourd’hui, les strongyloses gastriques posent d’énormes problèmes de conduite d’élevage auxquels s’ajoute l’émergence de résistance des parasites vis-à-vis des antiparasitaires. Aucune solution immédiate n’existe. Néanmoins, plusieurs pistes sont proposées telle que l’utilisation plus rationnelle des antihelminthiques notamment par le suivi du pepsinogène sanguin. Cette approche a retenu notre attention. La présente revue décrit ces protéinases aspartiques gastriques bovines, plus spécifiquement le pepsinogène et la prochymosine. Cette approche nécessite l’étude de la structure des zymogènes, de leurs mécanismes d’activation et des méthodes de dosage dans le sang. Le manuscrit se terminera sur une mise au point traitant de l’importance des problèmes que posent les verminoses gastriques et sur l’intérêt du dosage du pepsinogène sanguin dans la gestion de ces pathologies chez les bovins.
