Abstract :
[en] Raman spectroscopy is an emergent fast, non-invasive, non-destructive and cost-effective analytical method ensuring quality, traceability, and authenticity in the food industry. This chapter explores the basic principle, instrumentation, and operational parameters of Raman spectroscopy, highlighting its molecular fingerprinting capabilities. Advanced modalities, such as Resonant Raman Spectroscopy, Surface-Enhanced Raman Spectroscopy, and Spatially Offset Raman Spectroscopy, developed to increase the method sensitivity and selectivity are also discussed for food analyses. Raman spectroscopy serves as a potent tool for quality control and authenticity assessment. Notable applications developed here include detecting pesticide residues in fruits and vegetables, characterizing their molecular structure, and identifying potential fraud or adulteration, contributing to agricultural safety. Additionally, Raman spectroscopy is valuable in detecting adulteration in edible oils. Ongoing research aims to enhance sensitivity and accuracy in food analysis using Raman spectroscopy.
