Abstract :
[en] Initial bound activity of β -galactosidase, immobilized on Sepharose activated with CNBr or coupled to porous glass beads, was 51 and 72% resp. of the free enzyme activity. The enzyme retained its activity after 80 h of continuous operation using milk. Initial activity of chymosin coupled to glass beads was only 8-10% but rose to 38% when protected by an inert protein. Only 40% of initial activity was retained after 1 h continuous exposure to milk.
