Abstract :
[en] In the past decades, many studies have been done on DIC concerning various fruits and vegetables. One type of DIC equipment is dominant in Chinese market, which mainly studied by Prof. Bi and his colleague. A schematic diagram of the DIC reactor was shown in Figure 2. The DIC equipment heats materials by heat radiation through steam pipes which contain steam inside, thus the pressure of the processing vessel almost remain at around atmosphere pressure. Previous studies have reported the enhancement effect of DIC treatment on phytochemical extraction, but few study focused on the effect of DIC on pectin extraction. The aim of this study is to investigate the impact of Instant controlled pressure drop (DIC) treatment on the pectin extraction.
