Abstract :
[en] Hydrogen sulfide (H 2 S) serves as the crucial indicator of food freshness. The development of smart packaging capable of real-time H 2 S detection represents a crucial advancement for food safety monitoring, yet challenges persist in achieving accurate and reliable application within complex food matrices. Herein, a novel ratiometric fluorescent probe (ND 550 /NIR 820) was developed by strategically integrating a near-infrared (NIR) fluorescent probe (NIR 820) with a visible fluorescent probe (ND 550). The ND 550 /NIR 820 probe features an ultra-wide maximum wavelength gap (~270 nm), eliminating spectral overlap to enhance the precision in H 2 S quantification. The probe immobilized on a paper-based label enables real-time visual monitoring of H 2 S through highcontrast fluorescence and color transitions (blue-green to yellow), achieving ppb-level detection sensitivity and excellent specificity. Furthermore, the dual signals (colourimetric and fluorescence) of smart labels exhibited strong linear correlations with total volatile basic nitrogen (TVB-N) and total viable count (TVC) values of livestock and poultry meat (R 2 > 0.97). Based on these results, a smartphone application has been constructed to detect the freshness of pork, beef, lamb and chicken meat during storage. This work addresses the challenge of spectral overlap in ratiometric fluorescent probes and offers a portable tool for real-time monitoring of meat freshness, which could be beneficial for food safety management.
