[fr] L’élevage produisant du lait pour l’appellation d’origine protégée Comté apparaît comme un
modèle résilient sachant allier tradition et innovation. Le cahier des charges du Comté ne fige pas
une réalité changeante. Les changements concernent les organisations collectives de la filière,
l’évolution de la vache Montbéliarde et l’agrandissement des fermes. La manière dont les
éleveurs agencent ces changements dans de nouvelles pratiques est cependant rarement traitée.
C’est pourquoi au travers de la notion de « style d’éleveur », nous cherchons à saisir les manières
de faire, c'est-à-dire comment être éleveur aujourd’hui. La diversité des styles d’éleveur nous
semble être une force et une menace pour la filière.

Comté have not stopped a changing reality. Changes concern the collective organizations of the
food chain, the evolution of the Montbéliard cow and farm upsizing. However, the way the
breeders organise these changes in new practices is rarely addressed. That is why through the
notion of a "breeder's style", the article looks at the ways in which this occurs, or in other words,
how to be a breeder today. The diversity of breeders’ styles appears to be both a strength and a
threat for the Comté food chain.
